I have been so intimidated by this stuff in the past. A friend told me that I could just make it up the way I make my spinach and garlic sautee' that I love so much... slice up fresh garlic, heat olive oil in your biggest skillet (I have a huge one I bought just for this stuff) and as soon as the color starts to change, toss in the greens - washed, but not dried. Add some salt and cracked black pepper, and the result is a simple braise - we added teh veggie snausages for extra flavor and protein. Delicious! And ZOMG good for you. :-)
