totally off topic but mentionable because of your user icon... my friend dyslexia from Seattle knows the person who started the grilled cheese competition that you won and really wants her to start one here! so it looks like we're starting to plan one for Feb and I am so inspired by your creation that it's not even funny, it's actually intimidating but gives me killer edge :)

I'll keep you posted! but just wanted to let you know about it, that and that dyslexia was super impressed with your victory and that I knew a winner! woot!

That sounds awesome! I can't wait to hear about it. I am planning to go to LA to compete in the one in February there, where I fully expect to get creamed - it'll be great anyway.

I'll tell you exactly how I did it...

I went to a really good gourmet cheese store. I'd had the idea to use these roasted mushrooms (crimini, which are "baby portobello") that I'd recently made and really loved. So I had one ingredient in mind when I started. I explained about the contest and said that I was planning to use the mushrooms in my sammich, and asked for recommendations.

I tasted a bunch of cheeses, picked out two I liked which were both really different, then bought some 6 year old cheddar just because I love a nice sharp cheddar. Spent more than I'd planned on - but I'd fallen in love with the expensive Testun de Barolo and had to have it!

Then I went home, tasted the cheeses again and thought about bread. This was on Tuesday of the week of the contest. I decided to keep the bread a simple sourdough, and the next day I made some test sammies (best part of this is getting to make lots of tests!)

The day of the event, I was not 100% certain what to do, and actually blending the two cheeses (since the asiago is softer and more melty than the testun) was an inspired intuition that I thought of WAY last minute. I don't think I even had a chance to do a test sammy, or maybe I made one really quickly... so anyway, try some cheeses, ask for suggestions, but make your own decisions (one of the guys at the cheese shop suggested I give up the idea of the mushrooms as he thought they would dominate the sammich, and another suggested blue cheese because portobello is the veggie equivalent of steak (or so he said - he'd been to culinary school, too.) I ultimstely rejected both of these suggestions but they did give me food for thought. And I did consider dropping the mushrooms, but was so in love with the flavor that they prevailed (and the wine flavored cheese stood up to them quite well.)
